Cheeseburger Casserole

Vegan Cheeseburger Casserole

Yeahhh…this one didn’t make it long enough for an untouched-dish photo. Oops!


1 tbsp olive oil
1/2 c onion, chopped
1 c mixed greens or spinach
1 tomato, thinly sliced
9 oz. bag Beyond Meat Beefy Crumbles
1 tbsp hamburger seasoning (we used Grill Mates)
10 oz. container Heidi Ho! Chia Cheeze – Creamy
1/2 c plain almond milk
1 tbsp nutritional yeast, optional
1 tsp salt, optional
1/2 box whole grain penne pasta, prepared according to box


Preheat oven to 350 degrees.

In medium frying pan, saute onion and Beefy Crumbles with hamburger seasoning. Add greens and place lid over pan to wilt.

At the same time, whisk Cheeze, almond milk, nutritional yeast and salt in sauce pan over medium heat until smooth.

Dump penne into your casserole dish, then spread Beefy Crumbles mixture evenly over the noodles. Pour Cheeze sauce evenly over the whole thing. Place tomato slices on top, overlapping slightly (if you want to impress yourself with the presentation). Cover with foil and bake for 30 minutes. Remove foil for the last 5-10 minutes, if desired.
